
Beef and Bean Enchiladas with Cilantro Crema
Cheesy, saucy, and packed with seasoned beef and beans, these enchiladas bake up perfectly tender with a rich enchilada sauce and a cool cilantro crema on top. A simple comfort meal that feels homemade in the best way.
Ingredients
- 7–10 small flour tortillas
- 1 lb ground beef
- 1/2 can refried beans
- 1 yellow onion, diced
- 1/4 oz cilantro, chopped
- 1 oz sour cream
- 2 tsp taco seasoning
- 10 oz enchilada sauce
- 2 oz shredded cheddar-jack cheese
- Olive oil
- Salt and pepper to taste
Instructions
- Prepare the IngredientsDice onion and chop cilantro. In a small bowl, combine sour cream, cilantro, and 1 tsp water. Stir until smooth and set aside.
- Start the FillingHeat a drizzle of olive oil in a large pan over medium-high heat. Add ground beef and onion. Cook until beef is browned and fully cooked, about 5–7 minutes. Drain excess grease if needed.
- Finish the FillingStir refried beans and taco seasoning into the beef mixture until fully combined. Stir in a small handful of cheese and season with salt and pepper.
- Assemble the EnchiladasSpread a thin layer of enchilada sauce in the bottom of a casserole dish. Fill tortillas with beef mixture, roll tightly, and place seam-side down in dish. Top with remaining enchilada sauce and cheese.
- Bake and ServeCover with foil and bake at 400°F for 10 minutes. Remove foil and bake another 5–7 minutes until cheese is melted and bubbling. Top with cilantro crema before serving.
