Beef and Bean Enchiladas with Cilantro Crema

Cheesy, saucy, and packed with seasoned beef and beans, these enchiladas bake up perfectly tender with a rich enchilada sauce and a cool cilantro crema on top. A simple comfort meal that feels homemade in the best way.

- 7–10 small flour tortillas
- 1 lb ground beef
- 1/2 can refried beans
- 1 yellow onion, diced
- 1/4 oz cilantro, chopped
- 1 oz sour cream
- 2 tsp taco seasoning
- 10 oz enchilada sauce
- 2 oz shredded cheddar-jack cheese
- Olive oil
- Salt and pepper to taste
Prepare the IngredientsDice onion and chop cilantro. In a small bowl, combine sour cream, cilantro, and 1 tsp water. Stir until smooth and set aside. Start the FillingHeat a drizzle of olive oil in a large pan over medium-high heat. Add ground beef and onion. Cook until beef is browned and fully cooked, about 5–7 minutes. Drain excess grease if needed. Finish the FillingStir refried beans and taco seasoning into the beef mixture until fully combined. Stir in a small handful of cheese and season with salt and pepper. Assemble the EnchiladasSpread a thin layer of enchilada sauce in the bottom of a casserole dish. Fill tortillas with beef mixture, roll tightly, and place seam-side down in dish.
