Beef and Bean Enchiladas with Cilantro Crema

Cheesy, saucy, and packed with seasoned beef and beans, these enchiladas bake up perfectly tender with a rich enchilada sauce and a cool cilantro crema on top. A simple comfort meal that feels homemade in the best way.

Ingredients
  

  • 7–10 small flour tortillas
  • 1 lb ground beef
  • 1/2 can refried beans
  • 1 yellow onion, diced
  • 1/4 oz cilantro, chopped
  • 1 oz sour cream
  • 2 tsp taco seasoning
  • 10 oz enchilada sauce
  • 2 oz shredded cheddar-jack cheese
  • Olive oil
  • Salt and pepper to taste

Instructions
 

  • Prepare the Ingredients
    Dice onion and chop cilantro. In a small bowl, combine sour cream, cilantro, and 1 tsp water. Stir until smooth and set aside.
  • Start the Filling
    Heat a drizzle of olive oil in a large pan over medium-high heat. Add ground beef and onion. Cook until beef is browned and fully cooked, about 5–7 minutes. Drain excess grease if needed.
  • Finish the Filling
    Stir refried beans and taco seasoning into the beef mixture until fully combined. Stir in a small handful of cheese and season with salt and pepper.
  • Assemble the Enchiladas
    Spread a thin layer of enchilada sauce in the bottom of a casserole dish. Fill tortillas with beef mixture, roll tightly, and place seam-side down in dish. Top with remaining enchilada sauce and cheese.
  • Bake and Serve
    Cover with foil and bake at 400°F for 10 minutes. Remove foil and bake another 5–7 minutes until cheese is melted and bubbling. Top with cilantro crema before serving.
