
Pasta with Italian Sausage & Pumpkin Sauce
Creamy pumpkin pasta with Italian sausage, warm spices, and Parmesan cheese.
Ingredients
- 1 lb Italian sausage
- 1/2 onion diced
- 4 garlic cloves minced
- 1 15 oz can pumpkin puree
- 1 14.5 oz can chicken broth
- 1/2 cup half-and-half
- 1/2 cup sour cream
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- Salt and black pepper
- 1 16 oz pasta
- Grated Parmesan
- Italian seasoning optional
Instructions
- Cook sausage in a large skillet until browned; drain excess fat.
- Add onion and garlic; cook until soft.
- Stir in pumpkin, broth, cream, sour cream, and spices. Simmer until thickened.
- Cook pasta according to package directions and drain.
- Toss pasta with sauce and serve with Parmesan and seasoning.
