Pasta with Italian Sausage & Pumpkin Sauce

Creamy pumpkin pasta with Italian sausage, warm spices, and Parmesan cheese.

Ingredients
  

  • 1 lb Italian sausage
  • 1/2 onion diced
  • 4 garlic cloves minced
  • 1 15 oz can pumpkin puree
  • 1 14.5 oz can chicken broth
  • 1/2 cup half-and-half
  • 1/2 cup sour cream
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • Salt and black pepper
  • 1 16 oz pasta
  • Grated Parmesan
  • Italian seasoning optional

Instructions
 

  • Cook sausage in a large skillet until browned; drain excess fat.
  • Add onion and garlic; cook until soft.
  • Stir in pumpkin, broth, cream, sour cream, and spices. Simmer until thickened.
  • Cook pasta according to package directions and drain.
  • Toss pasta with sauce and serve with Parmesan and seasoning.
