This Taco Bake Enchilada-Style is what happens when your taco craving meets casserole night. Savory seasoned beef, creamy refried beans, warm tortillas, and a blanket of melty cheese—this one is weeknight magic
Make it once, and you’ll be putting this on repeat.

Ingredients
  

  • Preheat oven to 400°F.
  • Dice the onion into ¼” pieces.
  • In a large non-stick pan, heat 2 tbsp olive oil over medium-high heat.
  • Add ground beef and onion, cook until beef reaches 160°F.
  • Stir in taco seasoning + 1 cup water, simmer until reduced.
  • Add refried beans to the beef, mix well, and heat through. Turn offthe heat.
  • Coat the bottom of a 9×11 casserole dish with ½ can of enchilada sauce.
  • Fill each tortilla with 2 heaping tbsp of the meat mixture.
  • Roll and place seam-side down in the dish, side by side.
  • Cover with the remaining enchilada sauce.
  • Add cheese (go big or go home).
  • Cover with foil and bake for 10 minutes.
  • Serve with a dollop of sour cream and your favorite hot sauce. Reheats like a dream.

Notes

  • Double the batch and freeze one—you’ll thank yourself later.
